Pork Egg Roll In a Bowl

This is on the top of my list for favorite whole30 meals.  I am sure if you have tried the whole30, then you know how you need to get creative with the compliant ingredients.  There a two things I will mention about this recipe to start out with….one, you would normally put chopped green onions in this, but I despise green onion, and two, as you can see from the picture I used a fork instead of chopsticks.  I wasn’t going to pretend that I can eat anything other than a sushi roll with chopsticks! Probably won’t be the most pinned image without the chopsticks, but I keep it real around here! One of the interesting ingredients with whole30 is the use of coconut aminos.  I had never heard of such thing, but it is meant to replace your soy sauce.  I plan to never go back to soy sauce! I ordered mine on Amazon here. I also love the ginger paste that I got from Trader Joe’s.  It is so much easier than grating ginger.

My 145 pound husband says he could eat the entire pan all by himself, that’s how much he loved it.  He was actually surprised that it is a whole30 compliant meal.  Said it tastes too good to be healthy! Haha.  I apologize for not having any pictures for the process, my 4 month old baby was just not a happy camper today so I was in a bit of a rush.  I hope you give it a shot, it’s super easy and fast.

Instructions
  1. In a large skillet, cook the ground pork and onions together.
  2. Once browned, stir in carrots, coconut aminos, ginger paste, garlic, onion powder, garlic powder, cabbage, and salt and pepper.
  3. Cover with a lid and cook on med-low for 15-20 minutes until cabbage is soft.
