Chicken & Broccoli Spaghetti Squash Casserole

I would like to start off by saying this is definitely not a quick meal…so if you are counting on that, perhaps you should check out some of my other recipes.  This recipe takes so long because you have to cook the spaghetti squash in the oven for 40 minutes, there is probably 10 minutes of prep work and then another 15 after you have the cooked spaghetti squash.  So overall it takes just over an hour to prepare.  It really is pretty tasty though.  I was a little worried when I made it because this was my first time using coconut milk and I really don’t like the taste of coconut at all.  Turned out you couldn’t even taste the coconut so that was nice.  On the plus side, it makes about 6 servings so you can have leftovers if you are not a family of 6.

This is my second time ever making spaghetti squash and I made sure to google how to cut one.  Last time I felt like I needed to go get a chainsaw to break that sucker open….for real!! I almost broke my knife in it!  I found out if you take a paring knife and puncture slices all around it, then stick it in the microwave for 5 minutes, it is much easier to cut open.  It also made it easier to scrape out the seeds inside.  So take my hard lesson learned if this is your first time making spaghetti squash.


Start out with what I just mentioned above, then cut it in half and scrape the seeds out.  You will drizzle with olive oil and top with salt and pepper like below. Make sure to rub in the olive oil.

Place them flesh side down on a sheet pan lined with parchment paper and cook at 375 degrees for 40 minutes.

You can start to prepare the rest now.  Slice your chicken breasts into bite size pieces.  Slice your bacon strips into small pieces.  Partially steam your broccoli.  That way everything is ready for when the squash is complete.  I cooked my bacon first, removed the bacon and drained most of the grease, then I cooked my chicken in the same pan. I’m all about saving dishes now!

Let the squash cool a little or use oven mitts while you “shred” it with a fork to make spaghetti like pieces. While your spaghetti squash is cooling start the garlic coconut milk sauce.

In that same skillet you used to cook the bacon and chicken pour in your coconut milk, egg, chopped garlic, and season with salt and pepper to your liking.  You will need to continue to whisk this mixture over medium heat until it starts to thicken (about 5-7 minutes).  When this is ready, put all your ingredients into a casserole dish, stir and bake in a 400 degree oven for 10 minutes.
